    Prepare the Pancake Batter

    In a large bowl, whisk together the flour, baking powder, sugar, and salt.

    Mix Wet Ingredients

    In a separate bowl, beat the eggs and then add the milk, ube halaya, melted butter, and vanilla extract. Mix until smooth.

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium-low heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for an additional 2-3 minutes or until golden brown.

    Prepare Lemon Ube Condensed Milk

    In a small bowl, mix together 1/2 cup of condensed milk, 2 tbsp of ube halaya, and the juice of 1 lemon. Stir until well combined.

    Stack the pancakes on a plate, drizzle with lemon ube condensed milk, and top with a scoop of vanilla ice cream. Garnish with toasted cereal.
