    Pickle the Onions

    Slice the red onion thinly and soak in a mixture of vinegar, water, and a pinch of salt for at least 30 minutes.

    Cook the Chorizo

    In a skillet over medium heat, add a tablespoon of olive oil and cook the chopped chorizo until browned and cooked through, about 5-7 minutes.

    In a small saucepan, combine the tamarind paste and stout beer. Heat over low heat and stir until the mixture is smooth. Let it simmer for 5 minutes, then set aside.
