Prepare the Salmon
In a medium bowl, flake the cooked salmon fillets and mix in the ponzu sauce until well combined.

Chop the Scallions
Finely chop the scallions and fold them into the salmon mixture. Add sriracha sauce to taste for extra spiciness.

Fill the Wontons
Lay out the wonton wrappers on a clean surface. Place about 1 tablespoon of the salmon mixture in the center of each wrapper. Moisten the edges of the wrappers with water and fold them to form a triangle, pressing to seal.

Fry the Taquitos
In a deep skillet, heat the oil over medium-high heat. Once hot, carefully add the taquitos in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Serve the spicy salmon taquitos hot with additional ponzu sauce or sriracha sauce for dipping.
