Prepare the octopus
In a large pot of boiling salted water, cook the octopus for about 45 minutes or until tender. Remove from heat and let it cool in the cooking water.

Marinate
Once cooled, remove the octopus and cut it into tentacle pieces. Marinate the octopus pieces with olive oil, lemon juice, salt, and black pepper for at least 30 minutes.

Prepare the plating
On a serving plate, arrange the grilled octopus, sliced red onion, and avocado. Drizzle leche de tigre and sriracha sauce over the top.

Garnish
Sprinkle fried cancha and plantain chips around the octopus for added crunch and flavor.

Serve immediately while the octopus is warm, and enjoy!
