Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In another bowl, mix the flour and cornstarch together. Set aside.

Fry the Chicken
Heat vegetable oil in a deep frying pan over medium-high heat. Remove chicken from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour and cornstarch mixture, ensuring a thorough coating. Carefully place the chicken in the hot oil and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
Toast the burger buns. On the bottom half of each bun, add a piece of fried chicken, then drizzle with hot maple syrup. Top with pickles, arugula, pickled onions, and a generous dollop of salsa tartara. Place the top half of the bun on and press gently.
