Cook the Rice
In a saucepan, combine jasmine rice with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until rice is tender and water is absorbed. Fluff with a fork.

Stir-Fry the Ingredients
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced sirloin steak and stir-fry until browned (about 3-4 minutes). Remove steak and set aside.

Add Vegetables
In the same skillet, add another tablespoon of oil if needed, then add the sliced red onion and minced ginger. Stir-fry for 2 minutes until fragrant. Add the diced tomatoes and stir-fry for another 2 minutes.

Cook the Eggs
In a separate non-stick skillet, heat 1 tablespoon of oil over medium heat. Crack the eggs into the skillet and cook sunny side up until the whites are set but the yolks are still runny.

Serve
Serve the stir-fried beef and vegetables over a bed of jasmine rice, topped with the sunny side up eggs, and accompanied by crispy fries.
