Preparation Instructions
- 1
Prepare the Shrimp Tempura
In a bowl, combine the tempura batter mix with ice-cold water until smooth. Heat vegetable oil in a deep pan over medium-high heat. Dip each shrimp in the batter and carefully place in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
- 2
Cook the Sweet Plantains
Peel and slice sweet plantains diagonally into about 1-inch thick pieces. In the same pan with vegetable oil, fry the plantain slices until golden brown on both sides, about 3-4 minutes. Drain on paper towels and sprinkle with salt.
- 3
Prepare the Crab Salad
In a mixing bowl, combine lump crab meat, softened cream cheese, salt, and black pepper. Mix gently to combine without breaking the crab meat.
- 4
Assemble the Dish
On a serving plate, place a generous scoop of the crab salad in the center. Arrange the crispy shrimp tempura around the crab. Place the fried sweet plantains on the side and drizzle with spicy mayo.
