Prepare the Sweet Plantains
Peel and slice the sweet plantains diagonally into 1-inch thick pieces.

Fry the Plantains
In a frying pan, heat 1 cup of vegetable oil over medium heat. Fry the sweet plantain slices until golden brown on both sides. Remove and drain on paper towels.

Make Tempura Batter
In a mixing bowl, combine the tempura batter mix and ice water. Stir gently until just combined (do not overmix).

Heat Oil for Frying Shrimp
In a deep pot or fryer, heat the remaining vegetable oil to 180°C (350°F).

Dip and Fry Shrimp
Dip each shrimp into the tempura batter, allowing excess to drip off. Carefully place the battered shrimp into the hot oil and fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Assemble the Dish
On a serving plate, arrange the fried shrimp, slices of cream cheese, fried sweet plantains, and sliced avocado. Drizzle eel sauce over the top and season with salt to taste.
