    Prepare the Shrimp Tempura

    In a mixing bowl, combine the tempura batter mix with cold water according to package instructions. Heat vegetable oil in a deep pan. Dip shrimp in the batter and carefully place them into the hot oil. Fry until golden brown and crispy. Remove and drain on paper towels.

    Cook the Sweet Plantains

    Peel the sweet plantains and slice them diagonally. In the same pan with oil, fry the slices until they are golden brown and caramelized. Drain on paper towels.

    Prepare the Salmon

    Season the salmon fillet with salt and pepper. Heat a non-stick pan over medium heat and sear the salmon for about 4-5 minutes on each side, or until cooked to your liking. Remove from heat and let it rest.

    Make the Passion Fruit Aioli

    In a small bowl, combine mayonnaise and passion fruit pulp. Mix well and season with salt to taste.

    Make the Spicy Mayo

    In another small bowl, combine mayonnaise and sriracha sauce. Adjust the sriracha to your spice preference.

    On a serving plate, place the seared salmon, top it with shrimp tempura, and add dollops of cream cheese and fried sweet plantains. Drizzle with passion fruit aioli and spicy mayo before serving.
