Preparing Sushi Rice

Rinse the Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear, about 3-4 times. This removes excess starch.

Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it sit, covered, for 10 minutes. Transfer rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow to cool to room temperature.

Slice Hamachi

Using a sharp knife, slice the hamachi into thin sashimi pieces. Aim for even slices, about 1/4 inch thick.

Slice Salmon and Tuna

Similarly, slice the salmon and tuna into thin sashimi pieces, keeping them uniform in size for a balanced presentation.

Assembling the Bowl

Layer the Rice

In a serving bowl, add a generous scoop of prepared sushi rice. Gently press down to form a base.

Add Fish Slices

Artfully arrange the sliced hamachi, salmon, and tuna on top of the rice. You can create a pattern for visual appeal.

Add Garnishes

Cut nori sheets into strips and sprinkle them over the fish. Add a dollop of wasabi on the side and drizzle soy sauce over the top. Finish with chopped green onions.
