Cooking Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add fusilli pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Salmon
Season the Scottish salmon fillets with salt and black pepper on both sides.
Pan-Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily.
Combine Ingredients
In a large bowl, combine the cooked fusilli pasta, fresh pesto, cherry tomatoes (halved), and kalamata olives. Toss until well combined.
Serve
Place a generous serving of the pasta mixture on a plate and top with the pan-seared salmon fillet. Garnish with additional pesto if desired.
