Ribeye Steak and Sauce

Prepare the Ribeye

Season the ribeye steaks generously with salt and black pepper on both sides.

Sear the Steak

In a large skillet over medium-high heat, add the olive oil. Once hot, add the ribeye steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Remove the steaks from the skillet and let them rest on a plate covered with foil.

Make the Sauce

In the same skillet, reduce the heat to medium and add the cognac. Carefully scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.

Finish the Sauce

Stir in the heavy cream and green peppercorns. Allow the sauce to simmer for about 5 minutes until slightly thickened, stirring frequently.

Serve

Slice the rested ribeye steaks and serve with the cognac peppercorn cream sauce drizzled over the top.
