Prepare the Octopus

In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes or until tender. Remove from heat and let cool. Once cooled, chop the octopus into bite-sized pieces.

Cook the Chickpeas

If using dried chickpeas, soak them overnight and boil them until tender. If using canned chickpeas, rinse and drain them. Set aside.

Prepare the Insalata

In a large bowl, combine chopped octopus, chickpeas, halved cherry tomatoes, diced red onion, and chopped parsley.

Make the Dressing

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

Combine and Serve

Pour the dressing over the octopus mixture and toss gently to combine. Adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes before serving.
