Cook the Orzo
Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Salad
In a large mixing bowl, combine the cooked orzo, fresh spinach, chopped sun-dried tomatoes, and chopped shallots.

Dress the Salad
In a small bowl, whisk together the olive oil, salt, black pepper, and lemon juice. Pour the dressing over the pasta salad and toss to combine.

Grill the Shrimp
Preheat a grill or grill pan over medium-high heat. Season the jumbo pink Patagonia shrimp with salt and pepper. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from the grill.

Serve
Plate the orzo pasta salad and top with the grilled shrimp. Drizzle with balsamic reduction before serving.
