Cooking Instructions

  1. 1

    Prepare the Garlic Mashed Potatoes

Peel and chop the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and return to heat. Add minced garlic and butter, then mash until creamy. Season with salt and pepper to taste.

  2. 2

    Sauté the Broccolini

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccolini and sauté for about 5-7 minutes until tender but still bright green. Season with salt and pepper.

  3. 3

    Roast the Artichoke Hearts

Preheat the oven to 400°F (200°C). Place the artichoke hearts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 10-15 minutes until golden.

  4. 4

    Cook the Scallops

Pat the scallops dry with paper towels and season with salt and pepper. In a large skillet, heat the remaining olive oil over high heat. Add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

  5. 5

Prepare the Lemon Caper Butter Sauce

In a small saucepan, melt the butter over medium heat. Add the lemon juice, capers, and a pinch of salt. Stir to combine and cook for 2 minutes.

  6. 6

    Make the Prosciutto Powder

Preheat the oven to 375°F (190°C). Place prosciutto slices on a baking sheet and bake for 10-15 minutes until crisp. Let cool and then crumble into a powder.

  7. 7

    Plate the Dish

On each plate, place a serving of garlic mashed potatoes, top with sautéed broccolini, roasted artichokes, and seared scallops. Drizzle with lemon caper butter sauce and sprinkle with prosciutto powder.
