Cooking Instructions

  1. 1

    Prepare the Garlic Mashed Potatoes

Peel and chop the potatoes into chunks. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add minced garlic, butter, salt, and pepper. Mash until smooth and creamy.

  2. 2

    Grill the Zucchini

Slice the zucchini into rounds or strips. Toss with olive oil, salt, and pepper. Grill on medium heat for about 5-7 minutes, turning until tender and slightly charred.

  3. 3

    Cook the Swordfish

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the swordfish steaks with salt and pepper. Cook for about 4-5 minutes on each side until golden brown and cooked through.

  4. 4

Prepare the Lemon Caper Butter Sauce

In a small saucepan, melt the butter over medium heat. Add the capers and lemon juice, and cook for 2-3 minutes until heated through.

  5. 5

    Combine and Serve

Plate the garlic mashed potatoes, grilled zucchini, and swordfish. Top the swordfish with the lemon caper butter sauce and serve with artichoke hearts on the side.
