Preparation Steps

    Prepare Garlic Mashed Potatoes

    Peel and chop the potatoes into quarters. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add minced garlic and butter, then mash until smooth. Season with salt and pepper to taste.

    Sauté Broccolini

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add broccolini and sauté for 5-7 minutes until tender and bright green. Season with salt and pepper.

    Roast Artichokes

    Preheat the oven to 400°F (200°C). Cut artichokes in half and remove the choke. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 25-30 minutes or until tender.

    Make Lemon Caper Butter Sauce

    In a small saucepan, melt 2 tablespoons of butter over medium heat. Add capers and lemon juice, and simmer for 3-5 minutes. Set aside.

    Prepare Prosciutto Powder

    Preheat the oven to 350°F (175°C). Place prosciutto slices on a baking sheet and bake for 10-12 minutes until crispy. Once cooled, blend in a food processor until fine.

    Pan-Seared Scallops

    Pat scallops dry and season with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over high heat. Sear scallops for 2-3 minutes on each side until golden brown and cooked through. Remove from heat.

    Assemble the Dish

    On each plate, place a serving of garlic mashed potatoes, sautéed broccolini, and roasted artichoke. Top with pan-seared scallops and drizzle with lemon caper butter sauce. Sprinkle prosciutto powder over the top.
