    Prepare Garlic Mashed Potatoes

    Peel and chop the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and return to pot. Add minced garlic and butter, then mash until smooth. Season with salt and pepper to taste.

    Sauté Broccolini

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add broccolini and sauté for 3-4 minutes until bright green and tender. Season with salt and pepper.

    Roast Artichokes

    If using canned artichokes, drain and rinse them. Toss with 1 tablespoon of olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for 15-20 minutes until edges are crispy.

    Make Lemon Caper Butter Sauce

    In a small saucepan, melt 1 tablespoon of butter over medium heat. Add lemon juice and capers, simmering for a few minutes until slightly thickened.

    Prepare Prosciutto Powder

    Place prosciutto slices on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until crisp. Let cool and then crumble into a fine powder.

Cooking Rockfish

    Pan-Sear Rockfish

    Season rockfish fillets with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the rockfish, cooking for 4-5 minutes on each side until golden brown and cooked through. Remove from heat.
