Braised Arugula with Garlic

Seared Stem-on Artichokes

Lemon Caper Butter Sauce

Method

Preparation of Garlic Whipped Mashed Potatoes

  1. 1

    Prepare the Potatoes

Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, minced garlic, heavy cream, and salt. Whip until smooth.

Cooking the Grouper

  1. 3

    Season the Fish

Pat the grouper fillets dry and season with salt and black pepper.

  2. 4

    Sear the Fish

Heat olive oil in a skillet over medium-high heat. Add grouper and cook for 3-4 minutes on each side until golden brown and cooked through.

Braised Arugula

  1. 5

    Sauté the Garlic

In a pan, heat olive oil over medium heat. Add sliced garlic and sauté until fragrant.

  2. 6

    Add Arugula

Add arugula and salt to the pan. Cook until wilted, about 2-3 minutes.

Seared Stem-on Artichokes

  1. 7

    Prepare the Artichokes

Trim the artichokes and remove the tough outer leaves. Cut the tops off and rub with lemon juice.

  2. 8

    Sear the Artichokes

Heat olive oil in a skillet over medium heat. Add artichokes and cook for about 5-7 minutes until browned and tender.

Lemon Caper Butter Sauce

  1. 9

    Make the Sauce

In a small saucepan, melt butter over medium heat. Add lemon juice and capers, stirring to combine.

  2. 10

    Finish the Sauce

Remove from heat and stir in chopped parsley before serving.
