    Prepare the Garlic Whipped Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add minced garlic, salt, and enough butter to achieve a creamy consistency. Mash or whip until smooth.

    Braised Greens

    In a skillet, heat olive oil over medium heat. Add chopped greens and sauté until wilted, about 5-7 minutes. Season with salt and pepper.

    Cook the Scallops

    Heat a skillet over medium-high heat. Pat the scallops dry with paper towels and season with salt and pepper. Sear the scallops in the hot skillet for about 2-3 minutes on each side until golden brown.

    Prepare the Lemon Butter Caper Sauce

    In the same skillet, lower the heat and add butter, capers, and the juice of one lemon. Stir until the butter is melted and the capers are heated through.

    On each plate, serve a portion of garlic whipped potatoes, braised greens, and the seared scallops. Drizzle with lemon butter caper sauce and garnish with artichoke hearts.
