Cooking Instructions

  1. 1

Prepare the Garlic Whipped Mashed Potatoes

Peel and chop the potatoes into quarters. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 2

    Add garlic and cream

Mince the garlic and add to the potatoes along with butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste.

  3. 3

    Sear the Swordfish

Heat olive oil in a large skillet over medium-high heat. Season swordfish steaks with salt and pepper. Sear each side for about 4-5 minutes until cooked to desired doneness.

  4. 4

    Sauté the Arugula

In the same skillet, add arugula and sauté for 2-3 minutes until just wilted. Remove and set aside.

  5. 5

Prepare the Lemon Caper Butter Sauce

In a small saucepan, melt butter over medium heat. Stir in lemon juice and capers. Cook for 2-3 minutes until heated through.

  6. 6

    Roast the Artichokes

Drain and rinse artichoke hearts. In the skillet, sauté them for 5 minutes until golden brown.

  7. 7

    Serve

Plate the garlic whipped mashed potatoes, top with swordfish, sautéed arugula, and roasted artichokes. Drizzle with lemon caper butter sauce.
