    Prepare the Garlic Mashed Potatoes

    Peel and chop potatoes. Boil in salted water until tender. Drain and mash with butter, minced garlic, salt, and pepper to taste.

    Sauté the Broccolini

    In a pan, heat olive oil over medium heat. Add broccolini and sauté for about 5-7 minutes until tender. Season with salt and pepper.

    Cook the Salmon

    Season salmon fillets with salt and pepper. In a skillet, heat olive oil over medium-high heat. Add salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through. Remove salmon from the skillet.

    Make the Madeira Herb Pan Sauce

    In the same skillet, add butter and minced garlic, sauté for 1 minute. Pour in Madeira wine, scraping the bottom of the skillet. Simmer until reduced by half. Stir in fresh herbs.

    Plate the Dish

    Serve the pan-seared salmon on a bed of garlic mashed potatoes, add sautéed broccolini on the side, and drizzle with the Madeira herb pan sauce.
