Preparation Steps

  1. 1

    Prepare the Mashed Potatoes

Boil the potatoes in salted water until tender. Drain and mash them with butter, salt, and pepper to taste. Set aside.

  2. 2

    Roast the Artichokes

In a skillet, heat olive oil over medium heat. Add artichoke hearts and sauté until golden brown. Season with salt and pepper.

  3. 3

    Sauté the Arugula

In the same skillet, add the arugula and sauté briefly until just wilted. Remove from heat and set aside.

  4. 4

Prepare the Caper Lemon Butter Sauce

In a small saucepan, melt the butter over low heat. Add capers and lemon juice, stirring to combine. Keep warm.

  5. 5

    Cook the Halibut

Season halibut fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the halibut for about 3-4 minutes on each side until golden and cooked through.

  6. 6

    Prepare the Smoked Prosciutto Powder

Finely chop or blend the smoked prosciutto until it resembles a powder.

  7. 7

    Plate the Dish

On each plate, create a bed of mashed potatoes, top with sautéed arugula and roasted artichokes. Place the seared halibut on top, drizzle with caper lemon butter sauce, and finish with a sprinkle of smoked prosciutto powder.
