Method
Preparation and Cooking
- 1
Make the Fettuccine
Prepare house-made fettuccine according to your preferred recipe or package instructions. Set aside once cooked.
- 2
Prepare the Seafood Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 3
Add Tomatoes and Shrimp
Add the halved grape tomatoes to the skillet and cook for about 3-4 minutes until they start to soften. Then add the jumbo and pink shrimp, cooking until they turn pink and opaque, roughly 3-5 minutes.
- 4
Deglaze and Simmer
Pour in the white wine and vegetable broth, scraping the bottom of the skillet to release any bits. Bring to a simmer and cook for another 5 minutes.
- 5
Season and Combine
Stir in the chopped fresh basil, salt, and black pepper. Add the cooked fettuccine to the skillet, tossing to combine everything well.
- 6
Serve
Serve the jumbo shrimp pasta hot, garnished with additional basil if desired.
