    Prepare the Mashed Potatoes

    Add heavy cream, butter, minced garlic, salt, and pepper. Mash until smooth and creamy. Keep warm.

    Sauté the Arugula

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the arugula and sauté for 2-3 minutes until wilted. Season with salt and pepper.

    Grill the Artichokes

    If using canned artichokes, drain and rinse. Brush with olive oil, season with salt, and grill on medium heat for about 5-7 minutes until charred.

    Cook the Halibut

    Season the halibut fillets with salt and pepper. In a skillet, heat the remaining olive oil over medium-high heat. Add the halibut and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from pan.

    Make the Lemon Caper Butter Sauce

    In the same skillet, lower the heat and add the butter, lemon juice, and capers. Stir until butter is melted and sauce is combined.

    Plate the Dish

    Serve the halibut on a bed of creamy garlic mashed potatoes, topped with sautéed arugula and grilled artichokes. Drizzle with lemon caper butter sauce.
