    Make the Pasta Dough

    In a large bowl, combine the flour and salt. Make a well in the center, and add the eggs. Mix together with a fork until the dough begins to form. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned. Add the onion and sauté until translucent, then add the mushrooms, sun-dried tomatoes, and roasted poblano peppers. Sauté for another 5 minutes. Remove from heat and let cool. In a bowl, mix in the ricotta, mozzarella, parmesan, gorgonzola, and feta cheeses. Combine well with the sautéed mixture. Season with salt and black pepper.

    Roll Out the Dough

    Divide the pasta dough into four equal parts. Roll out each part into thin sheets using a pasta machine or a rolling pin, dusting with flour to prevent sticking.

    Form the Ravioli

    Place a sheet of pasta on a floured surface. Spoon small mounds of filling (about 1 tablespoon) onto the pasta, leaving space between each. Moisten the edges of the pasta with water, then place another sheet of pasta on top. Press down around the filling to remove air and seal the edges. Cut into squares or desired shapes.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

    Make the Smoked Gouda Cream Sauce

    In a saucepan, heat 1 cup of heavy cream over medium heat. Add 1 cup of smoked gouda cheese and stir until melted and smooth. Season with salt and pepper to taste.

    Serve

    Plate the ravioli and drizzle with the smoked gouda cream sauce. Garnish with fresh tomato leaves if desired.
