Method
Ribs Preparation
Season the Ribs
Preheat your oven to 300°F (150°C). In a bowl, mix together salt, black pepper, paprika, garlic powder, and onion powder. Rub the seasoning mixture all over the pork spare ribs.
Bake the Ribs
Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover tightly with another piece of foil and bake for about 2.5 to 3 hours, or until the meat is tender.
Roasted Garlic Mashed Potatoes Preparation
Roast Garlic
While the potatoes are boiling, wrap garlic cloves in foil and roast in the oven at 300°F (150°C) for about 30-40 minutes until soft.
Mash the Potatoes
Once the potatoes are fork-tender, drain and return them to the pot. Squeeze in the roasted garlic, then add butter and heavy cream. Mash until smooth, and season with salt and black pepper.
Kale & Sprout Slaw Preparation
Prepare the Slaw
In a large bowl, combine chopped kale, shredded Brussels sprouts, and grated carrot.
Make the Dressing
In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and black pepper. Pour the dressing over the slaw and toss to combine.
Chill
Let the slaw sit for about 15 minutes before serving to allow the flavors to meld.
