Preparation

    Prepare the Garlic Whipped Potatoes

    Peel and chop Yukon Gold potatoes, then boil them in salted water until fork-tender. In the last 5 minutes of cooking, add garlic cloves. Drain and mash the potatoes and garlic together, then mix in butter and heavy cream until smooth. Season with salt to taste.

    Grill the Broccolini

    Toss broccolini with olive oil, salt, and pepper. Grill on medium-high heat for about 4-5 minutes until tender and slightly charred.

    Prepare the Bone Marrow Butter

    Roast the bone marrow in a preheated oven at 400°F (200°C) for about 15-20 minutes until soft. In a bowl, mix the roasted bone marrow with butter, blackberries, and smoked sea salt until well combined.

Cooking the Steak

    Cook the NY Filet

    Season the NY Strip Filet with salt and pepper. Heat olive oil in a skillet over high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Plating

    On a plate, place a generous scoop of garlic whipped potatoes, arrange the grilled broccolini alongside, and top the steak with a dollop of smoked blackberry bone marrow butter.
