Preheat and prepare
Preheat oven to 375°F (190°C). Lightly oil a loaf pan or line a rimmed baking sheet with parchment and set aside. Heat 1 tablespoon olive oil in a small skillet over medium heat.

Mix meat loaf
In a large bowl combine ground turkey, cooled onion-celery-garlic mixture, egg, milk, breadcrumbs, grated Parmesan, chopped parsley, Worcestershire sauce, Dijon mustard, salt and pepper. Using clean hands or a spatula, gently combine until ingredients are evenly distributed. Do not overmix; stop when mixture holds together.

Shape and glaze
Transfer mixture to the prepared loaf pan or shape into a loaf on the baking sheet. Smooth the top. In a small bowl whisk together ketchup, brown sugar, and apple cider vinegar; spread half of the glaze evenly over the top of the loaf.

Bake
Bake in the preheated oven for 40 minutes. After 40 minutes, brush remaining glaze on top and bake an additional 10–15 minutes, until internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer placed into the center. If loaf browns too quickly, tent loosely with foil.

Rest and slice
Remove meat loaf from oven and let rest 10 minutes in the pan before turning out or slicing. Resting lets juices redistribute and makes slicing neater. Slice and serve warm alongside dressing.
Dressing (Stove-Top)

Sauté base
While the loaf bakes, melt 3 tablespoons butter in a large skillet over medium heat. Add the diced onion and celery and sauté until softened and beginning to brown lightly, about 6–8 minutes.

Add herbs and combine
Stir in the chopped sage and thyme; cook 1 minute to bloom the herbs. Season with 1 teaspoon salt and 1/2 teaspoon black pepper.

Moisten bread
Add 1 cup of the broth to the skillet and bring to a simmer. Place the dried bread cubes in a large mixing bowl. Pour the skillet mixture over the bread cubes, tossing gently to moisten. Add the remaining 1 cup of broth as needed to obtain a moist but not soupy texture. Let sit 3–5 minutes so bread absorbs liquid.

Bind with eggs and finish
Stir in the beaten eggs and chopped parsley (if using) to bind the dressing. Taste and adjust seasoning with additional salt and pepper if necessary. If you prefer a crisp top, transfer the dressing to a buttered baking dish and bake at 350°F (175°C) for 20–25 minutes until golden. Otherwise, keep covered and warm until serving.
