Prepare the greens
Rinse collard greens thoroughly under cold running water to remove grit. Stack leaves, fold in half, cut out the thick central stem, then roll or stack and slice crosswise into 1-inch ribbons. Measure about 1 lb after trimming.

Mince aromatics
Peel and dice the onion. Peel and mince the garlic cloves. If using a smoked ham hock or turkey leg, rinse it and pat dry.

Sauté aromatics
In a large heavy pot or Dutch oven, heat 2 tablespoons olive oil or bacon drippings over medium heat until shimmering. Add the diced onion and sauté 5–7 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and sauté 30–60 seconds until fragrant, taking care not to burn it.

Add smoked meat
If using a smoked ham hock or smoked turkey leg, add it to the pot with the aromatics and let it warm and brown slightly for 2–3 minutes to release flavor.

Deglaze and season
Pour in the apple cider vinegar and scrape up any browned bits from the bottom of the pot. Add brown sugar (if using), hot sauce (if using), kosher salt, and black pepper. Stir to combine.

Add greens and stock
Add the chopped collard greens to the pot (they will mound high). Pour in 4 cups chicken or vegetable stock — the liquid should come about halfway up the greens. Stir to moisten and distribute aromatics. Press the greens down so they begin to wilt into the liquid.

Simmer
Bring the pot to a gentle simmer over medium-high heat. Reduce heat to low, cover slightly ajar, and simmer gently for 35–45 minutes, stirring occasionally, until the collards are tender but still bright green. If you prefer them very soft, simmer up to 60 minutes. Add more stock or water (¼ cup at a time) if the pot becomes too dry.

Adjust seasoning and finish
Remove the smoked ham hock or turkey leg; let cool slightly, shred any meat and return the meat to the pot if desired. Taste the greens and adjust salt, pepper, and vinegar. Stir in red pepper flakes if using and finish with 1 tablespoon fresh lemon juice to brighten (optional).

Serve warm as a side. Leftovers keep well refrigerated up to 4 days and develop more flavor overnight.
