Pat dry & marinate
Pat the tilapia fillets dry with paper towels. Place fillets in a shallow dish. Add lemon juice, minced garlic, 1 teaspoon salt, 1 teaspoon black pepper, and hot sauce if using. Turn fillets to coat both sides. Let marinate at room temperature for 10–15 minutes (or refrigerate up to 30 minutes). Pat fillets again briefly before coating so excess marinade doesn't make the coating soggy.

In a shallow wide bowl or pie plate, whisk together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, 1 teaspoon salt, and 1/2 teaspoon black pepper until evenly combined.

Prepare wet dredge
In a separate shallow bowl, beat the large egg and whisk in 1/2 cup milk or buttermilk until smooth. This will help the dry mix adhere and give a crisp exterior.

Coat the fillets
Working one at a time, dredge a marinated fillet first in the flour mixture, shaking off excess, then dip into the egg-milk mixture, then return to the flour mixture for a final coating. Press the flour mixture gently onto the fillet to ensure an even, full coating. Place coated fillets on a wire rack set over a baking sheet to rest for 5 minutes — this helps the coating set and reduces shedding in the oil.

Heat oil
Pour approximately 1 cup oil into a heavy skillet (cast iron or stainless) to create a shallow layer about 1/4–1/2 inch deep (use a larger amount if your pan is larger). Heat over medium-high heat until oil reaches 350°F (175°C) or until a pinch of flour sizzles and browns within 10–12 seconds. Adjust heat to maintain temperature between 325–350°F while frying.

Fry the fillets
Carefully add 1–2 fillets to the hot oil without overcrowding the pan. Fry until golden brown and cooked through, about 3–4 minutes per side depending on thickness. Use a thin spatula to gently flip the fillets halfway through. Internal temperature should reach 145°F (63°C) and the flesh should flake easily with a fork. Transfer cooked fillets to a paper towel-lined plate or a wire rack to drain briefly.

Repeat with remaining fillets, bringing oil back to proper temperature between batches. If the coating is browning too quickly, lower the heat; if it’s not browning, raise it slightly. Sprinkle chopped parsley over the fillets if using and serve immediately with lemon wedges for squeezing over the fish.
