    Trim and marinate

    Pat the chicken pieces dry with paper towels. In a large bowl, whisk together buttermilk, hot sauce, 1 tsp kosher salt, and 1 tsp black pepper. Add the chicken, making sure pieces are submerged. Cover and refrigerate for at least 2 hours, ideally 6–12 hours.

Dredge / Frying

    Prepare dredge

    In a shallow dish or bowl, combine 2 cups flour, cornstarch, paprika, garlic powder, onion powder, dried thyme, cayenne, 2 tsp kosher salt, and 1 tsp black pepper. Whisk to evenly distribute.

    Heat oil

    Pour about 1 cup vegetable oil into a large heavy skillet (cast-iron preferred). Heat over medium-high until the oil reaches 350°F (175°C) or a piece of bread sizzles and browns in ~20–30 seconds. There should be enough oil to shallow-fry and crisp the bottom of the chicken; add a little more oil if needed.

    Dredge chicken

    Remove a piece of chicken from the buttermilk, letting excess drip back into the bowl. Dredge thoroughly in the seasoned flour mixture, pressing to form an even coating. Shake off excess and set on a wire rack. Repeat with all pieces.

    Fry chicken

    Working in batches to avoid crowding, place chicken pieces skin-side down in hot oil. Fry 6–8 minutes per side (depending on piece size), adjusting heat to maintain ~325–350°F so coating doesn’t burn before chicken cooks. Turn once to brown evenly. Use an instant-read thermometer — chicken is done at 165°F (74°C) at the bone. Transfer fried chicken to a wire rack set over a rimmed baking sheet to drain. Reserve about 1/4 cup of the hot frying oil/drippings (carefully skim and measure) to use in the gravy.

Smothering Gravy

    Sweat aromatics

    Reduce heat to medium and wipe the skillet lightly if it has excess burnt bits (leave some browned bits). Add 4 tbs butter to the skillet. When melted, add the thinly sliced onion and cook, stirring, until soft and translucent, 6–8 minutes. Add minced garlic and cook 30–45 seconds until fragrant.

    Make roux

    Sprinkle 1/2 cup flour over the softened onions and garlic. Stir continuously for 2–3 minutes to cook the flour and remove raw taste; the mixture will thicken and darken slightly.

    Build gravy

    Slowly whisk in 2 cups chicken stock and 1 cup whole milk, making sure to smooth any lumps. Add reserved 1/4 cup drippings, 1 tsp Worcestershire, and thyme. Bring to a gentle simmer and cook, whisking occasionally, until the gravy thickens to a silky consistency that coats the back of a spoon, about 5–8 minutes. Taste and season with 1 tsp salt and 1/2 tsp black pepper, adjusting as needed. If gravy becomes too thick, whisk in up to 2 tablespoons more milk or stock to reach desired thickness.

    Smother the chicken

    Reduce heat to low. Arrange the fried chicken pieces in the skillet gravy in a single layer or slightly overlapping. Spoon additional gravy over each piece so they are well coated. Cover the skillet with a lid and let chicken simmer gently in the gravy for 8–12 minutes to meld flavors and finish cooking. This also softens the crust a bit for the classic 'smothered' texture. Check internal temperature again — it should read 165°F (74°C).

Finish & Serve

    Carefully transfer smothered chicken to a serving platter and spoon remaining gravy over the top. Sprinkle chopped parsley. Serve immediately with mashed potatoes, rice, or biscuits and optional hot sauce on the side.
