    Trim the okra: remove the stem tips without cutting into the pod too deeply. Rinse pods and pat dry thoroughly with paper towels. Cut into 1/2–3/4-inch thick rounds.

    Toss cut okra with 1 tsp kosher salt and 1/2 tsp black pepper in a bowl; let sit 10 minutes to draw out excess moisture. Pat dry again if a lot of moisture collects.

    Prepare batter and dredge

    Whisk together 1/2 cup flour, 1/2 cup cornmeal, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder and 1/4 tsp cayenne in a shallow bowl or rimmed plate.

    In a separate bowl, beat 1 large egg with 1/2 cup buttermilk until smooth. One at a time, toss okra pieces in the buttermilk mixture to coat, letting excess drip off, then transfer to the flour-cornmeal mixture and toss to fully coat. Shake off excess coating and place on a wire rack.

    Heat 1 cup vegetable oil in a heavy skillet (cast-iron preferred) over medium-high heat until oil registers 350°F (175°C) or a small piece of coating sizzles and browns in about 30–40 seconds. Use enough oil for a shallow fry (about 1/2–3/4 inch deep).

    Working in batches to avoid crowding, add coated okra in a single layer and fry, stirring occasionally, until golden brown and crisp, about 3–4 minutes per batch. Adjust heat as needed so coating browns but does not burn. Use a slotted spoon to transfer fried okra to a paper towel–lined tray to drain.

    After the last batch, return the skillet to low heat, add 1 tablespoon unsalted butter and let it melt. Stir in 1 teaspoon fresh lemon juice and 1 tablespoon chopped parsley. Toss drained okra briefly in the butter mixture (or drizzle it over) to finish and add a glossy, savory finish.

    Taste and season with additional salt if needed. Serve immediately while hot and crisp.
