    Prepare the cabbage and aromatics

    Remove outer damaged leaves from the cabbage. Quarter the cabbage through the core, remove the core, and slice each quarter into 1/2-inch (1–1.5 cm) ribbons. Peel and thinly slice the onion. Peel and mince the garlic. Roughly chop parsley if using.

    Heat fat and sweat onion

    Place a large skillet or sauté pan over medium heat. Add the butter and olive oil. When the butter is melted and shimmering, add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and translucent, about 6–8 minutes.

    Add garlic

    Add the minced garlic to the pan and cook for 30–45 seconds, stirring constantly, until fragrant but not browned.

    Add cabbage and initial season

    Add the sliced cabbage to the pan in batches if necessary, turning with tongs to coat with the butter and oil. Sprinkle with the measured kosher salt and black pepper. Cook, stirring occasionally, until the cabbage begins to wilt and release moisture, about 6–8 minutes.

    Deglaze and simmer

    Pour in the chicken or vegetable broth and stir, scraping any browned bits from the pan bottom. Add the apple cider vinegar, sugar, and red pepper flakes. Reduce heat to medium-low, cover the pan partially (leave a gap for steam to escape), and simmer for 8–10 minutes until the cabbage is tender but still has a little bite.

    Adjust seasoning and finish

    Remove the lid, increase the heat to medium-high for 1–2 minutes to evaporate any excess liquid if the cabbage seems too wet. Taste and adjust with more salt, pepper or vinegar if desired. Stir in the chopped parsley just before serving.
