Base & Fruit

Sweetener & Flavorings

Method

Prepare Base & Fruit

  1. 1

    Combine juices

In a large pitcher, pour 3 cups pineapple juice, 1 cup fresh orange juice, 1/2 cup mango purée, and 1/4 cup freshly squeezed lime juice. Stir gently to combine.

  2. 2

    Sweeten and flavor

Add 2 tablespoons agave syrup and 1/4 teaspoon vanilla extract to the juice mixture. Stir until the agave is fully incorporated. Taste and adjust sweetness with up to 1 more tablespoon agave if needed.

Chill & Assemble

  1. 3

    Cool the mixture

Refrigerate the juice mixture for 15–20 minutes to chill, or proceed immediately over ice if you prefer a faster service.

  2. 4

    Prepare glasses

Fill four highball or Collins glasses evenly with crushed ice (about 3/4 cup crushed ice per glass).

  3. 5

    Layer and add fizz

Divide the chilled juice mixture evenly among the four glasses (about 1 cup each). Top each drink with 1/4 cup club soda (total 1 cup divided) to give a light fizz. Stir gently once in each glass to combine.

  4. 6

    Add grenadine float

Slowly drizzle 1/4 teaspoon grenadine into the top of each glass so it sinks slightly and creates a sunrise effect.

Garnish & Serve

  1. 7

Garnish each glass with a mint sprig and a pineapple wedge or orange wheel perched on the rim. Optionally slap the mint between your palms before garnishing to release aromatics.

  2. 8

Serve immediately with a straw. Each serving is roughly 1 cup (240 ml) of finished mocktail; yields 4 servings.
