Rinse and toast

Place 1 cup uncooked quinoa in a fine-mesh sieve and rinse under cold running water for about 30 seconds, rubbing with your fingers to remove the bitter coating. Drain thoroughly. In a medium saucepan, heat 1 tsp olive oil or butter over medium heat. Add the rinsed quinoa and toast, stirring, for 2–3 minutes until it smells nutty and starts to sizzle.

Simmer

Add 2 cups water and 1 tsp kosher salt to the saucepan and bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer gently for 12–15 minutes, or until the water is absorbed and the quinoa grains are translucent with a small white spiral (germ) visible.

Rest and fluff

Remove the saucepan from heat and keep covered for 5 minutes to steam. Then uncover and fluff the quinoa with a fork to separate the grains. Transfer the cooked quinoa to a large bowl to cool slightly (5 minutes) so it absorbs the dressing evenly.

Prepare dressing

While the quinoa cooks, combine 3 tbsp fresh lemon juice, 1 tsp lemon zest, 2 tbsp extra-virgin olive oil, 1 minced garlic clove, and 1 tsp black pepper in a small bowl. Whisk vigorously until emulsified. Taste and adjust acidity or oil: add up to 1 tbsp more olive oil if too tart, or another 1 tsp lemon juice if you want brighter flavor.

Herbs

Stir in 2 tbsp finely chopped parsley and optional 1 tbsp finely chopped fresh mint into the dressing. If using raw garlic and you prefer a milder garlic flavor, let the dressing sit for 5–10 minutes before mixing into the quinoa.

Combine

Pour the lemon dressing over the warm, fluffed quinoa and toss gently but thoroughly so each grain is coated. Taste and season with additional salt to taste (start with 1/4 tsp) and more black pepper if desired.

Finishing & optional add-ins

Add crunchy/creamy elements

Fold in 2 tbsp toasted pine nuts or slivered almonds if using, and 1 oz crumbled feta for a creamy-salty contrast. If you prefer no nuts or cheese, omit these or substitute with chopped cucumber or halved cherry tomatoes (not listed) for freshness.

Serve

Transfer the lemon quinoa to a serving bowl or individual plates. Garnish with lemon slices or wedges and an additional sprinkle of chopped parsley. Serve warm, at room temperature, or chilled. Refrigerate leftovers in an airtight container for up to 4 days.
