    Preheat a large skillet over medium heat. Lay the 8 slices of thick-cut bacon in a single layer. Cook until edges begin to crisp, about 4–5 minutes, then flip and cook another 3–5 minutes until golden and crisp but still slightly pliable. Transfer bacon to a paper towel–lined plate to drain. Reserve about 1–2 tablespoons of bacon fat in the skillet for extra flavor (optional) and discard the rest.

Breakfast Potatoes

    While the bacon cooks, wash and dry 1 lb potatoes. Cut into 1/2-inch dice (leave skin on if desired). Finely dice the small yellow onion and half red bell pepper.

    Heat a large skillet or cast-iron pan over medium-high heat. Add 2 tablespoons olive oil (or 1 tablespoon olive oil + 1 tablespoon reserved bacon fat if using). When oil shimmers, add the diced potatoes in a single layer if possible. Let them cook undisturbed 4–5 minutes to develop a brown crust.

    Stir the potatoes, then add the diced onion and red pepper. Season with 1 tsp salt, 1/2 tsp black pepper, 1 tsp smoked paprika, 1/2 tsp garlic powder, and 1/2 tsp dried thyme or oregano. Continue to cook, stirring occasionally, until potatoes are tender and crisped, 8–12 minutes more depending on pan size and potato thickness.

    Taste and adjust seasoning. Stir in 1 tablespoon chopped fresh parsley if using. Keep potatoes warm in a low oven (200°F / 95°C) or cover pan and set aside while you prepare eggs and buns.

Brioche Buns

    Split 4 brioche buns. Heat a separate large skillet or griddle over medium heat. Melt 2 tablespoons butter and brush onto cut sides of buns. Toast cut sides down in the skillet until golden brown, about 1–2 minutes. Set toasted buns aside, keeping them warm.

Scrambled Eggs

    Crack 8 eggs into a medium mixing bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk vigorously until mixture is homogenous and slightly frothy (this yields fluffy curds).

    Heat a nonstick skillet over low–medium-low heat. Add 1 tablespoon unsalted butter and let it melt, coating the pan. Pour in the egg mixture.

    Using a silicone spatula, let the eggs sit undisturbed 10–15 seconds, then gently push the eggs from the edges toward the center, forming large soft curds. Continue gently folding and pushing every 10–20 seconds. Remove from heat when eggs are still slightly wetter than you want; carryover heat will finish them. Total cook time about 3–5 minutes depending on heat.

    Immediately divide the scrambled eggs into four equal portions on a plate or on top of the bun bottoms (you’ll assemble sandwiches next).

Cheese & Assembly

    While eggs are finishing, place 1 oz (about a slice or small handful shredded) cheddar on each toasted bottom bun. If you prefer melty cheese, return the bun bottoms with cheese to the warm pan for 20–30 seconds or briefly under a broiler to melt.

    Top the cheese with a portion of scrambled eggs, then layer 2 slices of cooked bacon on each sandwich (or fold bacon to fit). Cap with the top brioche bun.

    Serve each sandwich with a generous scoop of the breakfast potatoes on the side. Offer hot sauce or ketchup as desired.
