Method

Simple Syrup & Basil Infusion

  1. 1

    Muddle basil into syrup

Place 0.5 tablespoons simple syrup and 3 fresh basil leaves into a small mixing glass or jar. Gently muddle the basil with the syrup 6–8 times to release aromatic oils without shredding the leaves. Let sit for 2 minutes to allow infusion.

  2. 2

After 2 minutes, lightly press the basil against the side of the glass with the muddler to extract a little more flavor, then strain the syrup-basil mixture through a fine mesh into a clean cup, discarding the leaves. Keep infused syrup ready.

Mixing the Cocktail

  1. 3

    Combine spirit and modifiers

In a mixing glass filled with ice cubes, add 0.25 cups gin, 0.5 tablespoon elderflower liqueur, 1 tablespoon fresh lemon juice, and the strained basil-infused simple syrup. Stir briefly (10–12 seconds) to chill and slightly dilute.

  2. 4

    Top with Cava

Strain the chilled mixture into a chilled flute or coupe glass (leave room at the top). Slowly top with 1 cup dry Cava, pouring gently down the side to preserve bubbles and avoid foaming over. Do not stir after adding the sparkling wine.

Finish & Garnish

  1. 5

Express the lemon twist over the surface of the cocktail by holding it over the glass and bending it to release oils, then run the twist around the rim and drop it into the drink.

  2. 6

Garnish with one fresh basil sprig placed gently on top. Serve immediately while sparkling and cold.
