    Prepare pan and oven

    Preheat the oven to 350°F (175°C). Lightly oil a 4-inch round or small ramekin (or a mini loaf pan) with 1 tsp neutral oil or melted butter and line the bottom with a small circle of parchment if available to ensure easy removal.

    Melt chocolate and butter

    Combine 3 tbs unsalted butter and 2 oz chopped semisweet chocolate in a small heatproof bowl. Melt together using a microwave in 15–20 second bursts, stirring between bursts, until smooth. Alternatively, melt over a double boiler on low heat, stirring until glossy and combined. Remove from heat and let cool for 1–2 minutes.

    Mix sugar and egg

    In a separate small bowl, add 1 cup granulated sugar and 1 large egg. Whisk briskly until the mixture is pale and slightly thickened, about 30–45 seconds. Stir in 1 tsp vanilla extract.

    Combine chocolate and egg mixtures

    Pour the slightly cooled melted chocolate-butter mixture into the sugar-egg bowl. Stir with a rubber spatula until fully combined and glossy.

    Add dry ingredients

    Sift or whisk together 1 tbs all-purpose flour, 2 tsp unsweetened cocoa powder, and a pinch of fine salt. Fold these dry ingredients into the chocolate mixture gently until no streaks of flour remain; do not overmix. If using, fold in 2 tbs chopped walnuts or pecans.

    Bake

    Spoon the batter into the prepared 4-inch pan or ramekin, smoothing the top. Bake in the preheated oven for 12–16 minutes: you want the edges set but the center still slightly soft — a toothpick inserted into the center should come out with moist crumbs. Exact time depends on dish size and oven; check at 12 minutes.

    Cool and unmold

    Remove the brownie bite from the oven and let it cool 8–10 minutes in the pan to set. Run a small knife around the edge if needed, then invert onto a small plate. If lined with parchment, lift out carefully.

    Dust the top lightly with 1 tsp powdered sugar if desired. Serve warm with a scoop of vanilla ice cream or a shot of espresso poured over or alongside for an affogato-style treat.

    If not eating immediately, cover and store at room temperature for up to 24 hours or refrigerate up to 3 days. Rewarm gently in a microwave for 8–12 seconds before serving to restore gooey texture.
