Burger Sauce
In a small bowl combine 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tbsp dill pickle relish, 1 tsp yellow mustard, 1/2 tsp Worcestershire sauce, 1/4 tsp smoked paprika, 1/4 tsp garlic powder, 1/2 tsp lemon juice, 1/8 tsp salt and a pinch (1/16 tsp) black pepper.
Whisk until smooth and well combined. Taste and adjust salt, lemon or relish to reach a balanced sweet, tangy, slightly smoky profile. Cover and refrigerate while preparing the burgers to let flavors meld (at least 10 minutes).
Burger Components
Prep produce and buns
Cut the tomato into 1/4-inch slices and thinly slice the red onion. Separate lettuce leaves and pat dry. Slice buns horizontally and set aside.
Preheat pan
Heat a large nonstick or cast-iron skillet over medium-high heat for 2–3 minutes until hot. Add 1 tablespoon vegetable oil and swirl to coat.
Season patties
Lightly season both sides of each Beyond Meat patty with 1/2 teaspoon salt divided and 1/4 teaspoon black pepper divided. Press gently to even thickness if needed (don’t overwork).
Cook patties
Place patties in the hot skillet and cook without moving for 3–4 minutes, until a browned crust forms. Flip and cook 3–4 minutes on the second side. Reduce heat to medium-low, place one slice of aged white cheddar on each patty, cover the skillet with a lid for 1 minute to melt the cheese slightly (or until desired melt). Total cook time per patty about 7–9 minutes.
Assemble burgers
Spread about 1.5–2 tbsp burger sauce on the bottom half of each toasted bun. Add 2 lettuce leaves, place the cheesy Beyond patty on top, add 2–3 pickle slices, a tomato slice, and a few rings of red onion. Spoon another 1/2–1 tbsp burger sauce on the top bun (or to taste) and close the burger.
Serve
Serve immediately while hot with extra burger sauce on the side. Pair with fries or a simple salad if desired.
