Acai Sorbet Base
Toppings
Method
Acai Sorbet Base
- 1
Prepare fruit
Remove frozen acai packets from packaging. If packets are very hard, run under warm water briefly to loosen, then cut out block into blender. Measure out frozen mixed berries and the sliced ripe banana.
- 2
Blend base
In a high-speed blender or food processor, add acai purée, frozen mixed berries, sliced banana, 1/4 cup almond milk and 1 tablespoon honey. Pulse to combine, then blend on high until smooth, scraping down sides as needed. The mixture should be thick, spoonable and similar to soft-serve. If too thick, add milk 1 tablespoon at a time; if too thin, add a few frozen berries or a small piece of frozen banana.

Prepare toppings
While the sorbet firms slightly, slice fresh banana and strawberries, dice mango if using, and measure out yogurt, granola, blueberries, shredded coconut and chia seeds.
- 5
Assemble the bowl
Divide the acai sorbet between two shallow bowls (about 1 cup each). Use the back of a spoon to smooth and create a small well in the center of each bowl for toppings.

- 7
Arrange fresh fruit
Neatly arrange sliced banana, strawberries, blueberries and mango in rows or clusters on top of each bowl around the sorbet.
- 8
Finish and serve
Sprinkle 1 tablespoon shredded coconut and 1/2 teaspoon chia seeds over each bowl. Drizzle about 1/2 tablespoon honey over each bowl (adjust to taste). Serve immediately with a spoon.
