Prepare the French Fries
Cook the French fries according to the package instructions until golden and crispy. Set aside.

Cook the Beef
In a large skillet, heat olive oil over medium heat. Add ground beef, salt, and pepper. Cook until browned and fully cooked, about 8-10 minutes.

Add Chorizo or Chili
Stir in the chorizo or mild pork chili and cook for an additional 5 minutes until heated through.

Assemble the Burgers
Toast the burger buns lightly. On the bottom half of each bun, place a portion of the beef and chorizo mixture. Top with a slice of American cheese and a sprinkle of shredded cheddar cheese.

Melt the Cheese
Cover the skillet and allow the cheese to melt for about 2 minutes.

Place the top half of the buns on top of the cheese, and serve the burgers hot with a side of crispy French fries.
