Prepare the Omelet Base
In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined and frothy.

Cook the Omelet
Heat a non-stick skillet over medium heat and add a little oil or butter. Pour the egg mixture into the skillet and allow it to cook for a few minutes until the edges start to set.

Add Fillings
Once the edges are set, sprinkle the chopped corned beef, drained sauerkraut, and shredded Swiss cheese over half of the omelet. Drizzle with Thousand Island dressing.

Fold and Finish Cooking
Carefully fold the omelet in half over the fillings and let it cook for another 2-3 minutes, or until the cheese is melted and the omelet is fully cooked.

Serve
Slide the omelet onto a plate and serve hot with hash browns and toast on the side.
