Directions

  1. 1

    Cook the Chorizo

In a skillet over medium heat, add the chorizo sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

  2. 2

    Prepare the Hash Browns

In the same skillet, add olive oil and heat over medium-high heat. Add the frozen hash browns, salt, and black pepper. Cook, stirring occasionally, until crispy and golden brown, approximately 10-15 minutes.

  3. 3

    Combine Ingredients

Once the hash browns are crispy, add the cooked chorizo and diced green chili to the hash browns. Stir to combine and cook for an additional 2-3 minutes until heated through.

  4. 4

    Add Cheese

Sprinkle the shredded pepper jack cheese over the hash brown and chorizo mixture. Cover the skillet and cook for another 2-3 minutes until the cheese is melted.

  5. 5

    Serve

Warm the tortillas in a separate pan or microwave. Serve the hash browns smothered with chorizo and green chili in tortillas.
