    Prepare the Beef

    Preheat your oven to 300°F (150°C). Season the beef roast with salt and black pepper. Heat olive oil in a large skillet over medium-high heat, and sear the beef on all sides until browned.

    Cook the Beef

    Transfer the seared beef to a roasting pan. In the same skillet, add sliced onions and cook until translucent. Add minced garlic and sauté for an additional minute. Pour in the beef broth and Worcestershire sauce, then bring to a simmer. Pour this mixture over the beef in the roasting pan.

    Roast the Beef

    Cover the roasting pan with foil and roast in the oven for about 3 hours, or until the beef is fork-tender. Remove from the oven and let it rest for 15 to 20 minutes before slicing thinly against the grain.

    Prepare the Au Jus

    Strain the cooking liquid into a saucepan, discarding the solids. Bring the liquid to a simmer and adjust seasoning with salt and pepper if necessary.

    Assemble the Sandwiches

    Slice the French rolls or hoagie buns and fill them with the sliced beef. Serve with a small bowl of the au jus on the side for dipping.
