Vanilla Shortcake

Preheat and prepare
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Whisk together the flour, 1/4 cup granulated sugar, baking powder, and salt in a large bowl until evenly combined.

Add the cold cubed butter to the flour mixture. Using a pastry cutter or clean fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

In a separate small bowl, whisk together the milk, heavy cream, vanilla extract and the egg until smooth.

Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula until just combined — the dough should be slightly shaggy and sticky. Do not overmix.

Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick round. Using a 2.5 to 3-inch biscuit cutter, cut 8 shortcakes; re-roll scraps once to cut additional rounds if needed.

Place shortcakes on the prepared baking sheet about 1 inch apart. Brush the tops lightly with a little extra heavy cream (reserved if any) or milk if desired, and sprinkle a tiny pinch of sugar if you like a slight crunch.

Bake for 12–15 minutes, until the shortcakes are golden on top and a toothpick inserted into the center comes out clean. Remove from oven and transfer to a wire rack to cool slightly (10 minutes).
Berry Compote

While the shortcakes bake, place the mixed berries, 1/2 cup granulated sugar, lemon juice and lemon zest in a medium saucepan over medium heat.

Cook, stirring occasionally, until the berries begin to release juices and the sugar dissolves, about 4–6 minutes. Using the back of a spoon or a potato masher, gently crush some of the berries to create a mix of whole and saucy pieces.

Bring the mixture to a gentle simmer and cook another 3–4 minutes until slightly thickened. Remove from heat and stir in 1/2 tsp vanilla extract. Taste and adjust sweetness or lemon if desired. Let cool slightly; the compote will thicken further as it cools.
Whipped Mascarpone Cream

Chill a medium mixing bowl and beaters in the freezer for 10 minutes to help whipping.

In the chilled bowl, combine the cold mascarpone, cold heavy cream, powdered sugar and 1/2 tsp vanilla extract.

Using an electric mixer on low speed, begin to combine until smooth, then increase to medium-high and whip until soft peaks form; the mixture should be light and spreadable but not overly stiff (about 1.5–2 minutes). If it becomes grainy, stop — overwhipping mascarpone can break the texture.

Taste and adjust sweetness to preference by adding up to 1 additional tablespoon powdered sugar if desired.
Assembly & Serve

Split each warm shortcake horizontally with a serrated knife.

Spoon about 1 to 1 1/2 tablespoons of whipped mascarpone cream onto the bottom half of each shortcake.

Top the cream with 2–3 tablespoons of warm or room-temperature berry compote, allowing some whole berries and syrup to sit on top.

Place the top shortcake half back over the berries. Dust the top lightly with confectioners' sugar and sprinkle the extra 1/4 tsp lemon zest over each for brightness.

Garnish with a fresh mint leaf on each shortcake and serve immediately while shortcakes are slightly warm. For an all-you-can-eat dessert station, keep extra compote and mascarpone cream refrigerated and replenish shortcakes as needed; rewarm shortcakes briefly in a 300°F (150°C) oven for 5–7 minutes before serving if desired.
