Base Espresso Blend

    Grind and Dose Beans

    Weigh 60 g dark roast espresso blend and 40 g medium roast Arabica. Combine and grind to a fine espresso grind (slightly finer than table salt) immediately before brewing to preserve aromatics.

    Brew Espresso

    Tamp a 20–22 g dose (single shot) or prepare a double shot using 18–20 g dose per shot depending on your machine. Use about 30–40 ml water per single shot (adjust to taste). For this recipe plan to produce two 30–40 ml shots (total ~60–80 ml) and set aside.

    Heat Milk

    Pour 3 cups whole milk into a frothing pitcher. Steam to 60–65°C (140–150°F) creating velvety microfoam. If you don't have a steamer, heat milk in a saucepan to just below simmer (around 65°C) and whisk vigorously to create foam.

Flavoring & Sweetening

    Combine vanilla syrup and brown sugar in the bottom of two warmed serving cups (or one large cup). Add a pinch of salt to intensify the flavors. Pour the freshly brewed espresso shots over the syrups and stir until sugar fully dissolves.

    Taste and adjust sweetness: add up to 1 additional teaspoon brown sugar or 1 tbs vanilla syrup if you prefer sweeter. Ensure adjustments are noted so the final balance matches the original Cucina calda profile (warm, slightly sweet, rounded vanilla).

Finishing & Garnish

    Assemble

    Pour steamed milk into the cup(s) with espresso and syrups, holding back the foam with a spoon. Fill to about 1 cm from the rim, then spoon the microfoam on top to create a silky crown.

    Dust a very light scattering (about 1/4 tsp total) of cocoa powder over the microfoam and finish with optional 1/2 tsp orange zest per cup for a subtle bright note. Serve immediately.

    If you prepared a larger batch (multiple servings), keep proportions: each serving uses ~1 double shot espresso (60–80 ml brewed), 1.5 cups milk per serving (for a large 12–16 oz cup), 1 tbs vanilla syrup, and 1 tbs brown sugar divided as needed.
