    Prepare Miso Marinade

    In a small bowl, whisk together the white miso paste, mirin, sake, granulated sugar, and kosher salt until smooth and the sugar begins to dissolve (about 30–45 seconds). Once combined, stir in the neutral oil. Taste the marinade and adjust balance: it should be noticeably savory with a hint of sweetness.

    Marinate the Fish

    Pat the black cod fillets dry with paper towels. Place fillets in a shallow nonreactive dish (glass or ceramic) skin-side down. Spoon the miso marinade over each fillet, spreading an even thin layer so the fish is well coated. Cover tightly with plastic wrap and refrigerate for at least 12 hours and up to 48 hours for best flavor and texture. (If short on time, 6–8 hours will still impart flavor.)

    Remove Excess Marinade

    When ready to cook, remove fillets from the refrigerator 20–30 minutes before cooking to temper. Using a paper towel, gently scrape off and discard excess marinade from the surface of the fish, leaving a thin glaze; this prevents burning during cooking while keeping flavor.

    Cook the Fillets

    Preheat oven to 400°F (205°C) and position a rack in the upper third of the oven. Heat a nonstick or ovenproof skillet over medium-high heat and add 1 teaspoon neutral oil. When oil is shimmering, place fillets skin-side down and sear 2–3 minutes until skin is crisp and releases easily. Transfer skillet to the preheated oven and roast 6–8 minutes, depending on thickness, until fish is opaque and flakes easily (internal temp ~130–135°F for moist texture). Alternatively, broil on high for 3–5 minutes, watching carefully to avoid burning.

    Remove cooked fillets from oven and let rest 1–2 minutes. Brush a light sweep of toasted sesame oil over the top for aroma. Transfer fillets to warm plates, skin-side down. Sprinkle with thinly sliced scallions and toasted sesame seeds. Serve immediately with lemon or lime wedges on the side for a bright squeeze at the table.
