Prep the beans

Rinse the green beans under cold water and pat dry. Trim the stem ends (and tails if desired). If beans are thick, halve them lengthwise for quicker cooking and more tender texture.

Blanch and shock

Bring a large pot of salted water to a rolling boil (use about 1 tablespoon salt per 4 quarts water). Add the trimmed green beans and blanch 3 minutes for crisp-tender or 4–5 minutes for more tender beans. Meanwhile prepare a bowl of ice water. Immediately transfer the beans to the ice water to stop cooking and preserve bright color; cool 1–2 minutes, then drain and pat dry.

Cook garlic

In a large skillet over medium heat, add olive oil and butter. When the butter has melted and the oil is shimmering (about 1 minute), add the thinly sliced garlic and red pepper flakes. Sauté, stirring constantly, until the garlic is fragrant and just beginning to turn golden at the edges, about 45–60 seconds. Watch carefully to avoid burning.

Toss with beans

Add the drained green beans to the skillet. Increase heat to medium-high and toss or stir to coat the beans in the garlic oil. Cook, stirring occasionally, 2–3 minutes until beans are heated through and develop a little blistering and char in spots.

Season and finish

Season with salt and black pepper, then squeeze in the lemon juice and toss to combine. Taste and adjust seasoning with additional salt, pepper, or a pinch more red pepper flakes if desired.

Serve

Transfer to a serving dish and serve immediately while warm. These are best served the same day; if making ahead, reheat briefly in a skillet to refresh texture.
