Bagel Preparation

Making the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add salt and gradually mix in the flour until a rough dough forms.

Kneading the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm area for about 1 hour, or until doubled in size.

Shaping the Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center and stretch it to form a bagel shape.

Boiling the Bagels
Bring a large pot of water to a boil and add baking soda. Boil each bagel for about 1-2 minutes on each side. Remove with a slotted spoon and place on a baking sheet.

Egg Wash and Toppings
Preheat the oven to 425°F (220°C). Brush each bagel with beaten egg and sprinkle with sesame seeds or poppy seeds if desired.

Bake in the preheated oven for 20-25 minutes, or until golden brown. Remove from the oven and let cool on a wire rack.
